Course: Full GAPS, Soup
Cuisine: GAPS

Ingredients

  • 1 tablespoon homemade unsalted butter melted; after butter introduction
  • 1 medium onion chopped
  • 1 cup finished kefir-cultured sour cream completed fermentation, then measured
  • 3 cups homemade chicken meat stock prepared separately
  • 1 small head fresh broccoli tough stem removed; bite-sized florets, about three cups at 1×
  • 1 large carrot shredded
  • 1/4 teaspoon ground nutmeg pure spice
  • 8 ounces sharp cheddar cheese natural traditionally made cheese, without starch coatings; about two cups grated at 1×; reserve a little of this amount for topping
  • 1/2 teaspoon sea salt or to taste
  • 1/4 teaspoon freshly ground black pepper

Equipment

  • Roomy stainless-steel or enameled cast-iron soup pot
  • Wooden spoon
  • Cutting board and knife
  • Grater
  • Measuring cups and spoons
  • Kitchen scale for cheddar
  • Ninja BN801 blender for completely cooled soup

Method

  1. Melt the butter in a roomy soup pot over medium heat. Add the chopped onion and sauté until the onion is soft and its edges start to brown.
  2. Add the finished kefir-cultured cream, chicken meat stock, chopped broccoli florets and shredded carrot. Keep on medium heat until simmering.
  3. Lower to medium-low and simmer about 20 minutes, or until the broccoli is soft and easily pierced with a fork.
  4. Stir in the nutmeg, sea salt and black pepper. Take the pot off the heat. For the Ninja BN801 route, let the soup cool completely before blending; do not put hot soup in that blender.
  5. Blend the cooled soup in batches within the marked liquid limit, then return it to the pot. Blend only a portion for a mostly creamy soup with some soft broccoli pieces, or blend more for a smoother soup.
  6. Warm the blended soup gently. Reserve a little of the measured grated cheddar for the bowls and stir the rest into the soup until melted. Keep below a boil after adding the cheese.
  7. Divide into servings, finish with the reserved cheddar and serve. Rewarm gently if needed; do not boil the cheese soup.

Notes

Cream: Measure one cup of finished kefir-cultured sour cream. Complete its fermentation ahead of the soup.
Stock and butter: Use three cups homemade chicken meat stock and one tablespoon homemade unsalted butter.
Cheddar: Eight ounces is about two cups grated at 1×. Choose natural, traditionally made cheese without starch coatings or other non-GAPS additives. Take the topping from the measured cheese.
Timing: Allow about 30 minutes preparation and 30 minutes stovetop cooking. The vegetable simmer is about 20 minutes within the cooking time. Cooling completely for the Ninja blender and gently reheating take additional time; no fixed full-recipe total is given. Stock preparation and cream fermentation are separate advance work.
Blending: The Ninja BN801 guide prohibits hot liquids. Cool completely, work within the marked liquid limit and blend in batches. Blend a portion for some soft vegetable pieces, or more for a smoother soup.
Cheese finish: Add cheddar after blending and gentle reheating. Keep the soup below a boil once the cheese is added.
GAPS: Full GAPS after butter, kefir-cultured cream and natural cheese are introduced. Contains dairy; no flour, eggs or nuts. This is not an early Intro or No-Plant soup.
Storage: Refrigerate leftovers promptly in shallow covered containers and use within three to four days. Rewarm gently while stirring; avoid boiling the cheese soup.
Scaling: At 2× use a larger pot and the doubled ingredients for eight servings. The soft-vegetable endpoint stays the same. Cooling and blender batch limits still apply.
