Total Time 3 hours 10 minutes
Servings: 1 batch
Course: Dessert, Full GAPS, Snack
Cuisine: American

Ingredients

  • 13 1/2 fluid ounces homemade full-fat coconut milk stir its cream into the milk before measuring
  • 1 cup fresh blueberries rinsed; blend without straining
  • 3 tablespoons fresh lemon juice seeds removed
  • 3 tablespoons plain unflavored grass-fed beef gelatin additive-free setting gelatin; not collagen peptides
  • 4 tablespoons raw honey

Equipment

  • Ninja BN801 blender
  • Saucepan
  • Measuring jug and spoons
  • Sturdy stirring spoon
  • Heat-safe trivet
  • Covered glass dish or glass/ceramic ramekins

Method

  1. Put all five measured ingredients in the Ninja BN801. Blend until no whole blueberries or white coconut-cream streaks remain. Keep the fine berry-skin flecks; do not strain.
  2. Transfer to a saucepan over low heat. Stir gently until the gelatin dissolves and no dry grains or gelatin clumps remain. Remove from the heat and rest the pan on a heat-safe trivet. The mixture should still be pourable; do not reduce it or bring it to a rolling boil.

  3. Pour into a glass dish with room below its rim, or divide among glass or ceramic ramekins. Keep the dish level. Refrigerate until set, allowing a few hours. Check that a spoonful holds its shape and leaves a hollow rather than flowing back; chill longer if needed.

Notes

Full GAPS after blueberries and homemade coconut milk have been introduced. This brief warming method is not a cooked-berry Introduction Diet recipe.
Yield: one batch. Portion count depends on the chosen dish and serving size. For the base 1× batch, the coconut milk is measured by volume: 13½ fluid ounces equals 1 cup plus 11 tablespoons. Stir its cream in before measuring. Blend the berries without straining.
Allow about five minutes for preparation, five minutes for gentle warming and three hours for chilling, or three hours and ten minutes in all. These are planning estimates, not exact tested timings. Stop warming when gelatin dissolves and chill until the center holds its shape when scooped. Homemade coconut-milk preparation is extra.
Use a glass dish or glass/ceramic ramekins. Keep covered and refrigerated between servings. For doubling, use a suitable pan, enough setting dishes and refrigerator space.
