Ingredients

  • 1 lb fresh ground beef with its natural fat
  • 1 1/4 cups zucchini peeled, cooked, and mashed before measuring
  • 1 tsp sea salt
  • qualifying GAPS cooking fat for skillet or baking pan, as needed

Equipment

  • Stainless saucepan or steamer
  • Potato masher or stainless fork
  • Measuring cups and spoons
  • Large stainless or glass mixing bowl
  • Le Creuset Signature Artichaut skillet
  • Uncoated stainless-steel sheet pan or glass/ceramic baking dish oven-bite method

Method

  1. Put the ground beef, measured cooked zucchini, and sea salt in a large glass or stainless-steel bowl. Mix only until the zucchini is evenly distributed.

  2. For patties, shape about 4 inches across and 1/2 to 3/4 inch thick. Arrange in a cold cast-iron or stainless-steel skillet, adding a little cooking fat only if needed.

  3. Turn the heat to medium-high. When the patties begin to sizzle, cook 1 minute. Lower to medium and cook 3 minutes more. Flip and cook about 4 minutes on the second side, adjusting for thickness until cooked through.
  4. For oven bites, heat the oven to 350°F. Lightly grease an uncoated stainless-steel sheet pan or glass/ceramic baking dish and portion the mixture into pieces of about 2 ounces.
  5. Bake about 20 minutes, five minutes more or less as needed, until browned outside and cooked through inside.

Notes

  • Full GAPS: Use after beef, cooked peeled zucchini, and the selected cooking method are introduced and tolerated.
  • Zucchini: Peel, cook, and mash before measuring exactly 1 1/4 cups.
  • Fruit-free: Do not add apple; use the separate beef-and-apple formula.
  • Oven timing: Displayed cook time is the patty method; oven bites take about 20 minutes.
  • Scaling: At 2x, use 2 pounds beef and 2 1/2 cups prepared zucchini for 8 servings.
