  • 1 lb fresh ground beef with its natural fat
  • 1-1 1/4 cups peeled tart apple grated raw or cooked and mashed
  • 1 tsp sea salt
  • 1 tsp dried mint optional
  • 1/2 tsp pure Ceylon cinnamon optional
  • 1 tsp pure garlic powder optional; additive-free
  • qualifying GAPS cooking fat for the skillet or baking pan, only as needed

  • Large stainless or glass mixing bowl
  • Box grater or food processor
  • Measuring cups and spoons
  • Le Creuset Signature Artichaut skillet
  • Uncoated stainless-steel sheet pan or glass/ceramic baking dish oven-bite method

Measured ground beef, peeled grated tart apple, salt, and optional spices
  2. For patties, shape the mixture about 4 inches across and 1/2 to 3/4 inch thick. Arrange all patties in a cold cast-iron or stainless-steel skillet, adding a little cooking fat only if needed.

  3. Turn the heat to medium-high. When the patties begin to sizzle, cook 1 minute. Lower to medium and cook 3 minutes more. Flip and cook about 4 minutes on the second side, adjusting for thickness until cooked through.
  4. For oven bites, heat the oven to 350°F. Lightly grease an uncoated stainless-steel sheet pan or glass/ceramic baking dish and portion the mixture into pieces of about 2 ounces.
  5. Bake about 20 minutes, five minutes more or less as needed, until browned outside and cooked through inside.

  • Optional spices: The beef-apple-salt base is complete without them.
  • Oven timing: The displayed cook time is the patty method; oven bites take about 20 minutes.
  • Scaling: At 2x, double every measured ingredient for 8 servings.
