Method
- Put the honey and filtered water in a small saucepan over medium-low heat. Stir until the honey is fully mixed through and the liquid is steaming hot. Stop before it simmers.
- Take the pan off the heat. Add the packed fresh basil leaves, stir briefly, and press them beneath the syrup. The initially bulky leaves soften and wilt.
- Leave the basil in the syrup for 30–45 minutes while the mixture cools. The leaves darken and settle lower in the liquid.
- Set a stainless mesh strainer over a glass or ceramic bowl. Pour the mixture through it. Press the leaves gently with a wooden spoon to collect most of the liquid, then discard the basil.
- Transfer the strained syrup to a clean glass jar, cover, and refrigerate until ready to use.
Notes
Total time is about 40–55 minutes: 5 minutes preparation, about 5 minutes gentle heating, and 30–45 minutes steeping. The card shows the shorter estimate. Stop heating as soon as the liquid steams, before simmering. Refrigerator chilling is additional.
Start with raw honey; the warming step means this is not an unheated raw-honey preparation. Use natural honey and fresh basil without additives. This sweet concentrate is for Full GAPS, not an earlier Intro assignment, sugar-free recipe, or a ketogenic/No-Plant adaptation.
Cover and refrigerate the strained syrup in a clean glass jar. Six servings refers to dividing the finished batch; no fixed tablespoon yield or shelf-stable storage is claimed.
For 2×, use 2 packed cups basil (about 3 ounces), 1 cup filtered water, and 1 cup honey. Makes 12 servings. Keep the steaming endpoint and 30–45-minute steep.
