Baked Honey Coconut Macaroons for Full GAPS

Four-ingredient Full GAPS coconut macaroons made with simmered honey and whipped egg whites. Bake small mounds at 250°F until golden, then cool completely to firm.
Prep Time 30 minutes
Cook Time 40 minutes
Total Time 1 hour 10 minutes
Servings: 48 small cookies, approximately
Course: Dessert, Full GAPS
Cuisine: GAPS

Ingredients

  • 2/3 cup honey plain; raw honey can be used, then heated as directed
  • 6 egg whites separated from yolks
  • 1 pinch natural sea salt
  • 2 1/2 cups unsweetened shredded coconut small shreds, additive-free; not coconut flour or sweetened coconut

Equipment

  • Medium stainless-steel or enameled saucepan
  • Clean dry mixing bowl
  • Electric mixer
  • Measuring cups
  • Spatula
  • Cookie scoop or tablespoon
  • Parchment-lined baking sheets
  • Thin lifting spatula
  • Heat-safe supports

Method

  1. Heat the oven to 250°F. Line baking sheets with parchment and set out a scoop or tablespoon, mixer, spatula, and heat-safe support for the saucepan. Separate the eggs and measure the ingredients.
  2. Put the honey in a medium saucepan over medium-high heat. Bring to a boil, reduce the heat, and simmer for five minutes. Watch the bubbling honey so it does not rise over the rim or scorch.
  3. While the honey heats, beat the egg whites in a clean, dry bowl until nearly stiff peaks form. Look for opaque white foam with visible beater tracks and a peak that mostly holds with a slight bend. Add the pinch of salt.
  4. With the mixer running, add the hot honey slowly in a thin stream. Mix until the honey is evenly incorporated into a smooth mixture, without separate amber streaks.
  5. Gently fold in the shredded coconut with a spatula. Lift and turn from the bottom until the shreds are evenly coated, keeping the whipped mixture airy.
  6. Scoop small mounds onto the prepared baking sheets, spaced about one inch apart. Keep the portions similar in size; the estimated forty-eight-cookie yield depends on portion size and foam volume.
  7. Bake for thirty to forty minutes at 250°F, until golden on the outside. Watch the exposed coconut tips and compare cookies across the tray. Additional oven loads take additional time.
  8. Lift with a thin spatula and let the cookies cool completely before packing or judging the final texture. They dry and harden further as they cool.

Notes

Timing: Thirty minutes preparation and thirty to forty minutes baking, plus complete cooling. The card uses the longer forty-minute bake and seventy-minute preparation-plus-baking plan. Cooling and extra oven loads are additional.
Yield: About forty-eight small macaroons per single batch. Actual count depends on scoop size and whipped volume. Use the full mixture and keep the mounds similar, spaced one inch apart.
Ingredients: Plain honey, six egg whites, a pinch of natural salt, and unsweetened additive-free shredded coconut. Coconut flour, sweetened coconut, and condensed milk are not part of this formula. Honey is heated in this preparation.
GAPS: Full GAPS after these foods are introduced. Dairy-free, but contains egg whites. Not an early Intro or No-Plant recipe and not labeled ketogenic.
Scaling: At 2× use one and one-third cups honey, twelve egg whites, two pinches salt, and five cups shredded coconut. Use sufficient saucepan and mixing-bowl capacity and preserve tray spacing. Extra oven loads extend the total time.
Leftover yolks: The separate honey vanilla bean lemon curd uses five yolks and one whole egg. Follow its own measured formula.
Storage: Cool completely before closing in a container. Refrigerate cooked leftovers and use within three to four days, or freeze portions separated by parchment. Chilled cookies may lose some crispness.
