Apple Ginger Celery Salad for Full GAPS

A crisp Full GAPS fruit snack with apple, celery, grated ginger, raisins and prepared walnuts, coated in homemade honey orange dressing. One batch; about 10 minutes assembly with both components ready.
Prep Time 10 minutes
Total Time 10 minutes
Servings: 1 batch
Course: Full GAPS, Salad, Snack

Ingredients

  • 1 ripe apple cored and chopped into bite-size pieces
  • 1 tablespoon fresh ginger finely grated; measure after grating
  • 1 cup celery chopped; measure after chopping
  • 1/2 cup raisins plain, without added sugar, starch, sorbates, sulphites or coatings
  • 1/2 cup salt-soaked crispy walnuts completely prepared, dry and cool; chop before measuring
  • 1 batch homemade honey orange dressing prepare the linked recipe first; use the complete batch

Equipment

  • Medium glass mixing bowl
  • Knife and cutting board
  • Hand grater
  • Measuring cups and spoons
  • Spoon or flexible spatula

Method

  1. Have the linked crispy walnuts completely prepared, dry and cool, and have one batch of the linked honey orange dressing ready. The walnut soaking/drying and dressing preparation are separate from this salad assembly.
  2. Core and chop 1 ripe apple into bite-size pieces. Chop enough celery to measure 1 cup. Finely grate fresh ginger and measure 1 tablespoon. Prepare the apple close to mixing time. Peeling the apple is an optional preparation choice after that form is introduced.
  3. Put the apple, ginger and celery in a medium glass mixing bowl. Add 1/2 cup plain raisins and 1/2 cup chopped prepared walnuts, measured after preparation and chopping. Lift and turn gently so the ginger, raisins and nuts spread through the mixture.
  4. Stir the prepared honey orange dressing once more, add the whole batch and fold gently from the bottom of the bowl. Continue until the pieces are evenly coated and still hold their shapes. Look for crisp apple and celery pieces, separate raisins, visible walnuts and a light gloss; a little juice may gather underneath as the salad sits.
  5. Serve as a Full GAPS fruit-based snack between meals once the ingredients are introduced. Cover and refrigerate promptly if holding or storing leftovers, and do not leave the dressed bowl at room temperature for more than 2 hours. The 10-minute preparation and total time are assembly estimates with both components already ready; the fruit and nuts will soften after dressing.

Notes

Makes one complete batch. The 10-minute preparation and total time are assembly estimates with the walnuts and honey orange dressing already prepared. Their soaking, drying and dressing preparation are separate jobs.
Prepare the crispy walnuts completely, dry and cool them, then chop and measure 1/2 cup. Measure the celery after chopping and the fresh ginger after grating. Use plain raisins without added sugar, starch, sorbates, sulphites or coatings.
Use one complete batch of the linked honey orange dressing, and gently fold until the pieces are coated. The dressing stays light and liquid; a little juice may gather underneath as the salad sits. Serve freshly mixed for the clearest crisp-and-chewy texture.
Full GAPS after the ingredients are introduced, as a fruit-based snack between meals. Peeling the apple is an optional preparation choice, but does not make the complete mixed bowl an early Intro recipe. Not No-Plant; no ketogenic menu ratio is provided. Contains walnuts; the listed ingredients have no dairy or egg. Honey is a bee product.
Cover and refrigerate promptly if holding or storing leftovers. Do not leave the dressed salad at room temperature for more than 2 hours. Stir gently before serving and expect the nuts and fruit to soften after dressing.
